Brinjal Or Ivi-Gourd Rice / वांगेभात किंवा तोंडलीभात

आज बघुया हा मसाला वापरून वांगेभात किंवा तोंडलीभात कसा बनवता येतो.

Laxmi Masale’s Goda Masala is famous authentic Maharashtrian style spice blend. This spice blend is sweet in taste.

In Goda masala seasame seeds and dry coconut flex are used, which gives it delightful flavor. Recipes like Brinjals-potato, traditional Brinjal rice, ladies fingers, Aaamati taste well when Goda Masala is used.

For making traditional Brinjal Rice:

Ingredients:
1. Good fresh small Brinjal- 5 numbers
(Slice each Brinjal in four long pieces)
2. Potato small size (slice each potato in four pieces)
3. Cashew nuts 9-10
4. Raisins 10-12
5. Diced onions
6. Curry leaves 10-12
7. Ginger garlic paste 2 teaspoons
8. Garlic cloves 4-5
9. Rice (Aambamohar or Basmati Tukada) one and half bowl
10. Lemon juice

Spices:
1. 3-4 green cardamom
2. 2-3 black cardamom
3. 2 Bay leaf
4. 6-7 peppercorn
5. 2-3 cloves
6. 1 mace
7. 2 small sticks of cinnamon
8. One small teaspoon cumin seeds
9. Half small teaspoon mustard seeds
10. Half small teaspoon asafoetida
11. 2 star anise
12. Small teaspoon Laxmi Masale's Selam Turmeric Powder
13. Small teaspoon Laxmi Masale's Bedagi Chili powder
14. Small tablespoon Laxmi Masale's Cumin-coriander powder
15. Two spoons of Laxmi Masale's Goda/ Brahmani Masala
16. Salt as required
17. Kasuri methi
18. Small piece of Jaggery

For Garnish:
1. One small bowl Desiccated fresh coconut
2.  Chopped coriander
3. Barista (Fried Golden onion)
4. One tablespoon ghee

Making of authentic Brinjal rice:
1. Wash rice and soak for half an hour.
2. Take Kadhai or Cooker and heat oil.
3. Fry cashew nuts, remove and keep aside.
4. In same hot oil temper all whole spices. Make sure that you keep stirring it well that it does not burn.
5. Then add chopped curry leaves, garlic cloves, onions and fry it till onion turns golden.
6. Add Brinjal and potato, raisins and fry for some time.
7. Then add salt, small piece of jaggery, Laxmi Masale's Goda Masala, Bedagi Mirch powder and cumin-coriander powder and turmeric powder. Mix it well and add lemon juice and ginger garlic paste and chopped coriander. Mix well.
8. Add soaked rice and fry along with all ingredients.
9. Add hot water to this and take two to three whistles if pressure cooker and if cooking in kadhai, then put cover on it with little water it. Keep checking inbetween if rice is done.
10. Remove cooked rice and place in serving vessel. Heat pan with little ghee in it. Put birista in it and cashews. Pour this on Brinjal rice. Garnish with little desiccated fresh coconut and chopped coriander leaves.

Authentic Maharashtrian Vaangebhaat is ready. You can use "Tondli" to make tondlibhaat in similar in the style.
